Je nachdem was ich so zur Verfügung habe mische ich rein was mir passt. Grundzutaten ist Ketchup. Wer es gerne etwas rauchiger mag kann etwas fertige BBQ Soße aus dem Supermarkt dazu mischen. Das sollte aber nur den Geschmack etwas ins rauchige nehmen, denn die fertigen BBQ Soßen sind oft sehr süß und überdecken den Geschmack dann.</span><div class="wprm-spacer"></div>
<span style="display: block;">Für die Schärfe Chilliflocken oder frische Chilli dazu geben. Was auch super funktioniert sind Chillipasten, die es in vielen Ländern unter diversen Namen gibt. Dann noch mit etwas Essig oder einem Schuss Worcestersauce die nötige Säure dazu geben. Damit es eine Sweet Chilli Soße wird mit 2 EL Honig mischen. Ich erwärme die Soße / Dip immer kurz etwas, damit der Honig sich besser mischen lässt. Das funktioniert wunderbar auf dem Grill.</span></div></div>

<p class="has-drop-cap">Ein super leckerer Rollbraten vom Grill ist mein Schweinerücken Caprese &#8211; also gefüllt mit Tomaten und Mozzarella. Das Gute an dem Gericht: sobald er auf dem Grill liegt hat man gute 1-2 Stunden seine Ruhe und kann den Rest des Essens vorbereiten. Ich zeige euch hier die Schritt für Schritt Anleitung. </p>

<h3 class="wp-block-heading">Zubereitung</h3>

<p>Den Schweinerücken müsst ihr zuerst etwas zurechtschneiden. Dazu sollten die Fettreste und ggf. die Membran (das ist eine silbrige Haut) auf dem Schweinerücken entfernt werden. Die meisten Metzger bereiten das aber schon sehr gut vor, so dass man nur noch wenig nachbessern muss.</p>

<p>Damit wir den Schweinerücken füllen können, schneiden wir die Rolle auf, damit ein großer Fladen entsteht. Legt dazu das Fleisch auf ein großes Küchenbrett und schneidet mit einem scharfen Messer ca. 1-1,5 cm über dem Brett das Fleisch bis zur Hälfte auf. Dabei immer die ganze Länge in einem Schnitt schneiden. Dann die „Rolle“ etwas aufrollen und den Vorgang so lange wiederholen, bis ein großes, rechteckiges Fleischstück entsteht. Das hört sich schwerer an als es ist. Einfach Mut!</p>

<p>Das Fleisch nun auf der Innenseite mit Salz und Pfeffer oder dem Grillgewürz würzen und abwechselnd, in senkrechten Streifen, mit den Tomaten und Mozzarellascheiben belegen. Am oberen Rand etwa 2cm frei lassen.</p>

<p>Das Fleisch nun von unten nach oben zusammenrollen und mit dem Küchengarn binden. So behält die Rolle die Form.</p>

<p>Von außen mit Grillgewürz oder dem Rub einreiben und den fertigen Braten stramm in eine Frischhaltefolie einwickeln. So noch etwa 1-2 Stunde ruhen lassen, damit die Gewürze ins Fleisch einziehen können.</p>

<h3 class="wp-block-heading">Auf dem Grill</h3>

<p>Den Braten bei indirekter Hitze bei ca. 150 Grad auf den Grill legen. Die Garzeit beträgt ungefähr 1 Stunde pro kg Fleisch. Am besten kontrolliert man das Ganze mit Hilfe eines Grillthermometers. Bei einer Kerntemperatur von 65 Grad, ist der Braten noch super saftig. Nach einer kurzen Ruhephase das Fleisch in Scheiben anschneiden und genießen.</p>
